AbstractThis research work is devoted to the technology of production of dietary and herbal natural preservatives for people with diabetes. Scientific work on hydrolysis of inulin from Jerusalem artichoke with citric acid, acid-rich fruit juices was carried out. The hydrolyzate was purified, transformed into syrup, and used as a sugar substitute in the preparation of canned sugar.
