AbstractUzbekistan differs in hot climatic conditions from the Russian lands, where sunflower seeds are mainly grown. In connection with this, we studied the component compositions, the effect of moisture on the bulk density and other equally important indicators of sunflower seeds and products of its processing. It has been established that sunflower seeds cultivated in the hot climatic conditions of Uzbekistan have distinctive features in physical-mechanical and physical-chemical properties than in the Russian regions. The linear dimensions, component compositions, the effect of moisture on the bulk density of sunflower seeds have been determined. It has been established that in the hot climatic conditions of Uzbekistan, the cultivation of sunflower seeds is more efficient than in the Russian regions.
